PARMESAN WHITE BEAN CHICKEN SOUP

This soup is protein packed, comes together in about 20 minutes and is the perfect comfort food on a cold night.

In a large pot or saucepan, combine chicken stock, minced onion, minced garlic, tomatoes, sugar, Italian herbs, salt and pepper.

Bring to a boil, then reduce heat and simmer for 5 minutes. This will help all of the flavors combine together.

While liquid mixture is boiling, drain and rinse white beans.

Stir beans and rotisserie chicken in. Continue to simmer for 5 more minutes to heat beans and chicken through.

Turn heat off and stir in spinach. Spinach will wilt quickly as you stir.

Take off heat and stir in parmesan cheese. Stir till combined well.

Ladle soup into bowls and top with parmesan cheese for garnish.
