Nothing says winter comfort food to me like taco soup. It’s one of those soups that is super filling with tons of protein, has just enough spice and is even better the next day!

Taco Soup

Nothing says winter comfort food to me like taco soup. It’s one of those soups that is super filling with tons of protein, has just enough spice and is even better the next day!

  1. Using the sauté setting on the pressure cooker (this can also be made in a crockpot or a stock pot on the stove), brown the meat. When meat is almost fully cooked, add onions to begin softening.
  2. While meat is browning, strain and rinse the three cans of beans.
  3. Turn off sauté setting and add corn, beans, Rotel, diced tomatoes and 2 cups water.
  4. Add approximately 4 tablespoons (2 packets) of taco seasoning and 4 tablespoons (2 packets) of ranch seasoning. Stir to mix thoroughly. If you notice the soup needs more liquid, add 1 small can of tomato sauce.
  5. Seal the pressure cooker lid and set the cook time for 4 minutes. When time is finished, quick release the pressure.
  6. Top with cheese and tortilla strips if desired.
