MARRY ME CHICKEN TORTELLINI

Marry Me Chicken has been a recipe that’s been passed down and shared for quite some time. There are variations in a skillet, crock-pot, even instant pot/pressure cooker! After trying a few different versions, we have finally settled on this recipe, which I’ve tested and tweaked to get just right!

The great thing about this version is that you can do everything in one skillet. Mine is about 15 inches across.

In a heated skillet, add a tablespoon of Olive Oil and 2-3 chicken breasts, depending on size. You aren’t going to cook the chicken breasts through, just brown them for 2-3 minutes on both sides.

While chicken is browning, combine chicken stock, heavy cream, cornstarch and seasoning. Whisk until well combined. Pour mixture into the skillet with the chicken.

Bring to a boil, then reduce heat and let simmer for 10 minutes. Add 2 Tablespoons of butter and sundried tomatoes. Stir till butter is melted and well combined.

Remove chicken from skillet. Add uncooked tortellini. It doesn’t take tortellini very long to cook, so I recommend watching it closely. While the tortellini is cooking in the sauce, slice the chicken into thin strips. Add chicken back into the sauce and toss to coat really well. The chicken will absorb all of those AMAZING flavors! Once the tortellini is cooked through, it’s time to eat.

This recipe could also be made in the crockpot by combining all ingredients except for the tortellini. Add the tortellini to the crock pot 10 minutes before you are ready to serve so it has time to cook through.

Serve with a side of fresh bread and sautéed spinach or on it’s own!
