MINI ROTISSERIE CHICKEN TOSTADAS

A tasty and delicious tostado is the perfect alternative for Taco Tuesday! They are easy to assemble and can be customized for everyone with very little fuss.

Preheat oven to 450Β°. Lay street taco tortillas on a baking sheet, brush both sides with oil and bake for 8-10 minutes until they are firm but not overly brown or crisp.

While the tortillas are firming up, combine rotisserie chicken, 4 ounces of tomato sauce and 1 Tablespoon of taco seasoning in a sauce pan. Toss till combined and then warm on low heat until heated through.

Spread refried beans on tortillas, layer chicken mixture and top with cheese. Place back in oven for 2-3 minutes, until cheese is melted.

Remove and top with your favorite toppings like lettuce, onion, tomato, sour cream and salsa!
