ONE POT SUN-DRIED TOMATO RICOTTA PASTA

I could probably eat pasta every day of my entire life and not get tired of it. There are SO many variations, so many flavors!

This super easy pasta dish is going to have your family begging for more. Bonus, it’s super easy clean up because you make it all in one pot.

The hardest part about this recipe is chopping the onions! Everything comes together in one pot and is ready to serve in about 30 minutes.

SUN-DRIED TOMATO RICOTTA PASTA

Ingredients

Instructions

  1. In a large pot, warm the olive oil then add onions and mushrooms. Sauté till soft.
  2. Add Italian seasoning, tomatoes, hot water, salt, pepper, and pasta. Stir and bring to a boil.
  3. Reduce the heat to medium, cover with a lid and cook until al dente (start checking the doneness according to the cooking time stated on the package, although it might take a bit longer with this method).
  4. Stir frequently keeping an eye on the amount of liquid in the pot. If at some point you think it needs more, just add a little bit of hot water.
  5. When the pasta is still al dente add ricotta and parmesan cheese. Stir to combine and serve!
