BAKED BACON RANCH PASTA
A baked pasta is a great, hearty meal, especially on a cold winter night. PLUS I love any kind of meal that can be cooked in 2 or less dishes. Technically this dish could be cooked in 1, but for time saving I used 2!
For this recipe, I used rotisserie chicken. If you are using uncooked chicken breast, you will need to cube it and add it to a large skillet with oil, salt and pepper. Stir the chicken frequently, until golden on all sides and no longer pink in the middle. Remove from skillet and set aside.
In a large sauce pan, cook pasta until al dente. Drain and set aside. I cooked the pasta while I was making the cheese sauce.
Since I am using rotisserie chicken for this recipe, I didnβt add the chicken in until later in the recipe, so I will start by making the sauce.
In a skillet, melt 3 tablespoons butter. Stir in flour with a whisk and whisk until a paste forms.
Gradually whisk in milk until well combined.
Stir in cream cheese, paprika, dry ranch mix and minced garlic until melted and combined.
Stir in shredded cheddar cheese until melted and well combined.
Add rotisserie chicken, diced tomatoes and cooked pasta. Stir until well combined.
Top with remaining shredded cheddar cheese and place in a 350Β° oven for 5-10 minutes. The pasta mixture is already cooked, this just gives time for the cheese to melt. Top with cooked bacon and serve!
