ROTISSERIE CHICKEN BBQ ENCHILADAS

I will never turn down enchiladas, so switching up the way I make them is always fun.

Mix 1 can drained pinto beans, 2 cups rotisserie chicken and 1 cup BBQ sauce together in a bowl.

Heat flour tortillas so that they roll easily. You can do this by wrapping the stack of tortillas in a paper towel and heat in the microwave for 15-20 seconds or heat in a pan till warm. Scoop mixture into center of tortilla and roll. Place in pan seam side down.. Continue till all tortillas are filled.

Cover with BBQ sauce and cheese. Bake at 350 degrees for 15-20 minutes, until heated through and cheese is melted.

Serve with sweet potato fries!
