ROTISSERIE CHICKEN BURRITO BOWLS

Burrito bowls are the easiest base for a customizable dinner that the whole family will love. Add the filling to a bowl and top with salsa, sour cream and cheese or on top of tortilla chips for an easy nacho stack!

Saute uncooked rice in olive oil for 2-3 minutes, until toasted. Add chicken broth, black beans and drained tomatoes.

Add garlic powder, onion powder and chili & lime seasoning. Mix everything together well. Cover and let simmer for 15 minutes until almost done.

Add rotisserie chicken breast, mix together well and cover. Cook an additional 5 minutes, until rice is fluffy and chicken is warmed through.

This burrito bowl rice mixture can be served in several ways:

  • on its own with toppings

  • on top of lettuce to make a burrito bowl salad

  • in tortillas to make tacos

  • on top of tortilla chips with toppings to make burrito bowl nachos (my favorite!)

**I like to double this recipe and freeze the additional servings for easy weeknight dinners.
