ROTISSERIE CHICKEN MEXI-ROLLUPS

As a native Texan, Mexican food is basically in my blood stream. In fact, when I was pregnant with Jack one of my biggest cravings was fresh tortillas and queso from a place called Rosa’s!

Any kind of taco night is a hit around here, so I came up with a quick variation on tacos that can be whipped up in under 30 minutes.

This recipe uses Rotisserie Chicken, so it’s already cooked and easily cuts your prep time in half! For more ideas on how to use a Rotisserie Chicken to make your life easier, you can check out my blog post: Rotisserie Chicken - The Why, What and How.

Preheat oven to 350 degrees.

Add about 2 cups of Rotisserie Chicken breast to a pan. It doesn’t have to be completely shredded, but it should be pulled in smaller pieces. Add 1 cup of chicken broth and taco seasoning. Stir till well combined. Add 1 can Rotel tomatoes and let mixture simmer for 5 minutes.

While mixture is simmering, warm the tortillas. I call these rollups instead of taquitos because they use flour tortillas. You can definitely use corn tortillas if you prefer. I like to warm tortillas on an open flame on my stovetop. It doesn’t take much time, just enough for the tortilla to begin to puff up, then flip!

Once tortillas are warmed, spoon chicken mixture into tortilla and top with Mexican cheese mix. Roll the tortilla tight and place seam down on baking sheet.

Place in oven for about 5 minutes or until cheese is melted and tortillas has crisped around the edges. Serve with Mexican Rice and sliced avocado or your favorite salsa for dipping!
