TORTELLINI CAPRESE PASTA SALAD
If you want a fresh, delicious salad that is super filling, you need to make this Tortellini Caprese Pasta Salad!
12 ounces Tortellini pasta, cooked al dente
Grape Tomatoes, sliced in half
Mozzarella Balls
Baby Leaf Spinach
Dressing - Combine 2 cups of your favorite Balsamic Vinaigrette dressing (my favorite is Kenโs Steakhouse brand) and 1 package Italian Seasoning Mix. Whisk till combined.
Cook the Tortellini Pasta till al dente, pour into a colander and rinse with cold water till the pasta is cooled.
Combine pasta, tomatoes, spinach and mozzarella into a large bowl. Pour dressing over salad and toss to combine. Refrigerate till ready to serve.
Optional: Top with a Balsamic Reduction Glaze drizzle. It adds the perfect amount of sweetness to balance the acidity of the vinaigrette.
