ROTISSERIE CHICKEN TAMALE PIE

This recipe is super easy to make and combines the southern flavor of cornbread with the spice of Mexican food!

Mix Jiffy cornbread mix with egg, milk and can of corn. Pour in round pan or baking dish, bake at 400 degrees for 15 minutes. The mixture will not be baked all the way through when you pull it out. While cornbread is baking, sautΓ© chicken, 1 can enchilada sauce and 2 tablespoons taco seasoning. It doesn't need to be heated all the way through, just combined well.

Pull pan out of oven and poke holes throughout. Pour the other can of enchilada sauce over the top of the cornbread. You want it to seep into the holes.

Add chicken mixture and top with cheese. Return to oven and bake for 20 more minutes. Top with green onions and serve with Mexican rice.
